Food(ography): Tartine Summer Fruit Bavarian


The Cooking Channel has a really great new show called Food(ography) with Mo Rocca. Each week the show, showcases various bakeries and specialty food locations. I’m usually drooling all over myself by the end. Last night, they visited Tartine and the owner, Elizabeth Prueitt made Summer Fruit Bavarian. YUMMY!!! I know it’s not summer…but something this good should be made ALL year round!!!

Tartine Summer Fruit Bavarian

INGREDIENTS

  • Genoise
  • 5 tablespoons unsalted butter
  • 1 1/3 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 6 eggs
  • Pinch salt
  • 1 cup, plus 1 tablespoon sugar
  • Special equipment: electric mixer
FRUIT PUREE:
  • 6 ounces strawberries
  • 1/4 cup sugar
  • Pinch salt
FILLING:

  • 1 tablespoon water
  • 1 1/2 teaspoons gelatin
  • 2 1/2 cups cold pastry cream, recipe follows
  • 2 cups very cold heavy cream
PASTRY CREAM:

  • 2 cups whole milk
  • 1/2 vanilla bean
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 1/2 cup, plus 1 tablespoon sugar
  • 2 eggs
  • 4 tablespoons unsalted butter
TOPPING:

  • 1 1/4 cups very cold heavy cream
  • 4 teaspoons sugar
BAVARIAN ASSEMBLY:

  • Genoise cake, cut into 2 layers
  • Fruit puree
  • Filling
  • 4 cups strawberries, hulled
  • Topping
  • Special Equipment: 10-inch springform pan with 3-inch sides
